WELL I'M HERE TO BREAK YOUR FEARS OF GLUTEN FILLED POISON-CAKES AND GLUTEN-FREE DISASTERS ALIKE!
Within the last few years, gluten-free products have become not only increasingly available, but much better in taste. Anyone who has eaten gluten-free for very long is familiar with the expensive, and often foul tasting gluten-free treats out there. It can be an agonizing and expensive road to finding things that actually taste good, or will bake properly. As you can see by the recipe to the right, baking isn't always as simple as traditional gluten recipes. You need to use several types of flours and other weird concoctions you've never heard of to even produce a recognizable pastry. Then there's the challenge of getting anything to taste halfway good! Throw another allergy (egg in my case) into the mix, and it just makes thing even more difficult.
Here are some of my favorite gluten-free foods and mixes!
Rice, corn, strawberry, chocolate, honey nut, and cinnamon Chex are now gluten free! In addition to having a broad variety reasonably priced cereal that can be found in any major grocery store, there are countless other uses for these little checkered miracles. Use them to make Rice Kripsies treats (Rice Krispies, despite being essentially the same thing, have malt flavoring in them and are not gluten free), crushed up as a topping to a cobbler, or even to bread things like mozzarella sticks or chicken nuggets.
Betty Crocker now makes gluten-free baking mixes (the yellow cake is also vegan, if prepared with egg replacer). Not only are all of these mixes really good by themselves, but they open endless doors for creativity! Along with their growing recipe page, almost any other recipe calling for a box of cake or brownie mix can now be made gluten free much easier. One of my favorite super simple recipes using one box of the white cake mix to create the best blueberry muffins ever. Ignore the eggs/oil/liquid in that recipe, and follow the directions on the box instead. Use an egg replacer if you have issues with eggs like I do. My favorites are listed below.
Tinkyada makes the best gluten free noodles I've ever tasted. They are made with brown rice, aren't gritty like other rice pastas, and taste nearly identical to wheat noodles. They don't get mushy like other gluten free noodles, and somehow manage to hold together. I use them in lasagna, pasta salads, stroganoff, spaghetti, you name it. I've even managed to start buying these in chain grocery stores!
Pamela's makes an awesome baking mix. It is kind of expensive, but it's cheaper and easier than buying all of the individual flours you'd need to mix to make your own (it does contain buttermilk, though, sorry vegans!), is already has leavening agents in it, and it tastes great. I use it in place of rice flour to make these chicken pot pies. It helps it puff up like a biscuit! I've also found that I really enjoy that crust recipe, and now make it in large batches, roll it out, cut into discs that fit my pyrex bowls/ramekins, and freeze them between sheets of wax paper, foil, and then in a plastic bag. They thaw very quickly, and can be used to make other meat, veggie, or even fruit pot pies. Dice up an apple, sprinkle some sugar, cinnamon, and a dash of the baking mix and put into your oven safe bowl. Toss one off the slightly defrosted discs on top, sprinkle some sugar, and bake at 325 for about 45 minutes. Voila! Instant single serving of pie. I've been experimenting with this a lot lately, especially since I'm the only one who eats gluten-free in the house.
Pamela's also makes a really good bread mix. It comes with the yeast packet, and can be used to make anything from dinner to cinnamon rolls. Make the "sweet bread" version found on the side of the bag (you just add a bit of sugar), and scoop a small bit into a muffin tin. Gluten free bread is always much stickier and gooier than their gluteny counterparts, so you probably won't have any luck rolling these out. Use either your own or my favorite cinnamon roll filling recipe, and spread a bit of that on top of the layer of dough. Repeat with another layer of dough, and another of the mixture. Bake according to the bag, and frost! These do really well frozen as well!
Baking without gluten AND egg can be pretty tricky. I've had the best luck using 3 tablespoons of applesauce for one egg, or 1 tablespoon of flaxseed meal soaked in 1/4 cup of hot water (let sit 5 minutes or so until it's turned into a gel) for one egg. I almost always use both of these at the same time. If the recipe calls for only one egg, I use about 2 tablespoons of applesauce, and about 2/3rds of the flaxseed mixture. If it calls for two eggs, I do one egg worth of each, etc.
If you're replacing dairy, I prefer using Earth Balance margarine, and hemp milk.
